have raw cake and eat it

 

This bread makes fantastic sandwiches and can even be cut into triangles so it looks like the real thing. Stuff it with avocado or nut/seed butter and salad and you have lunch!


200g raw organic buckwheat, sprouted 24 hours

50g organic sun dried tomatoes (the dry type), soaked

1 organic courgette

1 organic apple

1 organic avocado

bunch fresh basil or other fresh herbs of choice

slice onion or 1/2 spring onion

6 dessert spoons cold pressed, organic olive oil

2 teaspoons fresh organic lemon juice

pinch himalayan pink salt, or other salt (optional)

4 dessert spoons golden linseed


  1. 1.Put all ingredients except linseed into food processor with the S blade and process until everything is well broken down and it becomes a soft dough.

  2. 2.Remove dough and put into a bowl/

  3. 3.Grind the flax seeds in a grain mill, coffee grinder or grinder attachment to your food processor/blender/juicer, until it is a fine powder.

  4. 4.Mix the flax powder into the dough thoroughly.

  5. 5.Turn out onto a dehydrator sheets in a large square. Dehydrate for 2 hours at 53 degrees and then about 8 hours at 38 degrees. During the dehydration process, when they are firm enough, flip over the large square onto the mesh sheet and cut into triangles then continue to dehydrate.
