have raw cake and eat it
This is my older son’s favourite meal and it is great for taking out for a picnic or packed lunch. It is not completely raw but you can pack in some nutrient rich, raw foods. It is also fun for kids to help make and a good way to impress visitors. I lived in Japan for a while and think the Japanese might be a little horrified that I had corrupted their fantastic dish with brown basmati rice, but it make it healthier and I think it tastes great. Serves 4.
1 cup brown basmati rice, cooked and cooled slightly
2 cups alfalfa
2 avocados
6 sheets untoasted nori
1.Make soon after the rice has cooked and remember rice should be cooled quickly to make it safe to eat. I lay mine out on a plate.
2.Cut avocado into slices.
3.Lay nori out onto a sushi rolling mat or teatowel if you don’t have one.
4.Lay a thin layer of rice over nori, leaving approx 1 inch strip at the top to join it when it is rolled.
5.Lay a few slices of avocado across the middle of the square, all the way along.
6.Cover the rice with alfalfa.
7.Roll up from the bottom first and when you get to the top dip your finger in some water and then finish the roll to seal. Put aside on a plate.
8.When you are ready to serve, slice into pieces with a sharp knife.
