While many people think that buckwheat is a cereal grain, it is actually a seed related to rhubarb. It is great for raw food preparation and there are numerous recipes around for sprouted or sprouted and dehydrated buckwheat, also known as buckwheaties. It can also be used ground as a flour or soaked and either eaten whole or blended with other ingredients for dehydrated recipes.

I like it best in is sprouted form and like to use it for dehydrated fruit and buckwheat bars, sweet treats and as buckwheaties for breakfast museli. Once sprouted, the nutritional content increases tenfold and eaten in its raw state.

Buckwheaties are so versatile and can be used in many ways. They are fantastic to add that extra crunch to regular or raw chocolate and used whole or ground to flour for a heavenly cake base.
