I have been experimenting for a while to make a really good raw cheezecake without using nuts in the cheeze part. The reason for this is that the types of nuts required for such recipes such as cashews and macadamia can only be bought organic in this country out of their shells and I prefer not to use such ingredients as they go rancid so quickly once shelled and in fact few cashews are raw. In fact, macadamias even in shells deteriorate quickly too, due to their high oil content. Shelling your own cashews is tricky even if you can get them as there is a toxic substance between the shell and the nut. I am happier about using almonds as they have a protective brown skin around them to help prevent oxidation. Almonds are also alkaline forming rather than acid forming. My kids love cheezecake and I have finally come up with this, which is great for summer with lots of fresh, organic berries available.
