If you have ever wondered how to get more greens into your diet without having to eat salads continually, Victoria Boutenko has some great answers. I had been wanting to read her book ‘Green For Life’ for a long time as I was already inspired by her story of how she treated severe health problems of her whole family with a raw food diet. She wrote ‘Green For Life’ after inventing the ‘green smoothie’ to solve many of the problems presented to her with a raw food diet - particularly her family’s dislike of greens. I bought myself this book last week from Amazon and have been engrossed since it arrived the other day. I was expecting a recipe book of tasty things to make with greens - but it definitely isn’t that, despite some great recipes. It is in fact a throughly researched account of the many health benefits of greens including their ability to protect from cancer, delay aging and increase hydrochloric acid in the stomach to improve digestion. I even read some to my 5 year old for his bed-time story last night as I could not put it down. It is a reassurance to find that breaking down the hard cell walls of greens in a high powered blender in fact enhances absorption of nutrients. I am also relieved to discover that she adds large amounts of fruit to her smoothies to make them sweet without ill effect. I am now inspired to fill my cupboards with more fruit to make my green smoothies more palatable for my children, who take sips but do not drink whole cups......yet.....I’ll keep you updated.
