have raw cake and eat it

 

We eat this regularly. It is only about 60% raw but it is a great staple that is popular in our house and very quick to make. It is also a great transitional food for those who are experimenting with raw foods. You can get a lot of green into this recipe and my kids don’t seem to mind it looking green. It is a flexible recipe that allows for lots of variations so feel free to substitute what you have in your cupboard. Serves 4.


3 medium ripe organic tomatoes

1 cup organic sun dried tomatoes, washed and soaked in 200ml water (the dry type)

1 stick celery (include the leaves)

thin slice of onion or spring onion (optional)

2 carrots or 1 red pepper (or half of each)

2 tablespoons fresh, cold pressed, organic flax oil

1 tablespoon stock powder/cube

one or more of: lettuce leaves, brocolli, green cabbage leaves, kale/spinach/chard

1 onion, chopped

1 tablespoon cold pressed, organic coconut butter

fresh or frozen peas, fresh asparagus or other vegetable you would like to cook for the chunks on your soup

NEARLY RAWLY SOUP INGREDIENTS

You may edit your basket at any time. We don’t stock the following ingredients for this recipe, but the essential ones should be easy to buy anywhere: fresh tomatoes, celery, pepper/carrot, onion/spring onion, stock, green vegetables.


  1. 1.Chop everything into chunks and put in a high powered blender with the sundried tomatoes and their soak water.

  2. 2.Blend for 2 minutes, adding more water if necessary to get it going.

  3. 3.Add flax oil and blend for 8 seconds more.

  4. 4.Cook the onions in the coconut butter in a large saucepan and then add approx 1 litre boiling water and add the vegetables you are cooking (peas, asparagus etc.) and cook lightly; do not drain.

  5. 5.Stir on stock powder/cube.

  6. 6.Add a little cold water and then the blended mixture to water and cooked vegetables.

  7. 7.Serve immediately.
