We use dried apricots regularly in our recipes. They are a great source of iron and provide some sweetness along with fibre and nutrition. I prefer to sweeten my cakes with dried apricots rather than agave syrup if they need some extra sweetness.
Although these are readily available in most health food shops, organic unsulphured apricots such as these are not always available in supermarkets. I consider them such a staple that I am offering them here in our online shop to ensure they are available to all of you who wish to try out some of my cake and sweet recipes. Please note a very small amount of rice flour is added to these dried apricots in their processing to stop them sticking together. It is not noticeable and is usual for either rice flour or sunflower oil to be added to dried fruit for this reason and I think rice flour is a much better option than the oil.
They benefit from some soaking if they are to be blended, even in a high powered blender such as the Rhino. This will pulverise them into a puree (with water added) to use as a sweetener. We also eat them whole sometimes as a treat or an addition to porridge or museli - though not too many like that!
