It pairs beautifully with raw carob powder and you can mix it with raw cacao butter for a really special treat. Cocoa powder comes from cocoa beans. Does it mean that you can ground the cocoa beans or cocoa nibs to obtain the cocoa powder? The answer is no. In fact it is made by extracting the cocoa butter from the cocoa bean, then drying the residue and grinding it to a fine powder. Of course, chocolate is made from cocoa beans as well.
Cocoa powder is in dark brown colour. It tastes a little bitter when raw, but brings a good chocolate flavour to the desserts, cakes and biscuits it is mixed into. Keep in a cool, dry place and observe the manufacturer's use-by date.
