This is a great ingredient for cereals and crispy snacks. It can also be ground into a flour for raw cakes. You need to use raw, hulled buckwheat to make it which can be found in some health food shops. If you do not have a dehydrator you can buy some ready made for you.
raw buckwheat - prepare as much as you like - I can fit about 2 kg in my excalibur dehydrator on all 9 trays
1.Wash the buckwheat thoroughly and soak overnight, preferably in filtered water.
2.In the morning rinse the buckwheat and drain and leave in a pyrex bowl or similar covered with a clean tea towel.
3.Rinse and drain buckwheat again in the evening and return to its bowl and cover again with a teatowel.
4.In the morning spread buckwheat on sheets in the dehydrator and dehydrate for 2 hours at 53 degrees and then 6 hours 38 degrees.
5.Cool and store in an airtight container for up to 8 weeks.
