have raw cake and eat it
My kids love eating this by itself. It is full of healthy fats, protein, calcium and B vitamins. It is also great with crackers, breads or salads. Serves 4
200g organic almonds, soaked for 8 hours
90g cold pressed, organic coconut butter
50ml water
pinch himalayan salt (or other salt)
50g Engevita Flakes or other nutritional yeast flakes
1.Melt the coconut butter in a bowl over a pan of hot water.
2.Put the soaked almonds in a high powered blender and blend for 12 seconds at a time stirring in between blends, to break them up a little.
3.Add the melted coconut butter and water, stir in a little and blend again, 30 seconds at a time, stirring in between, until smooth. You might need to add some extra water to get it going.
4.Remove from blender and stir in salt and yeast flakes.
5.Refrigerate and serve. It will keep for a few days, but bear in mind that the oil in the almonds will start turning rancid once they are removed from their protective brown coating, so it is best eaten soon.
